A Mexican/Greek Fusion Feast!

I am a big fan of Mexican food.. burritos.. nachos.. chilli.. fajitas.. I love it all!

I’ve been trying out different healthier ways of having my favourite foods so I’ve picked burritos, making my own fajita mix, spicy rice and swapping the wraps for romain lettuce.

Ingredients: (serves 1)

Romain lettuce

Corn on the cob

Burritos:

  • 1 chicken breast
  • 1/4 yellow pepper
  • 1/4 green pepper
  • 1/4 red onion
  • 1 red chilli
  • cayenne pepper
  • paprika
  • lime

Spicy Rice:

  • half a cup of rice
  • sweetcorn
  • kidney beans
  • chilli
  • lime
  • cayenne pepper
  • 1/4 red onion

Tzatziki:

  • 2 tablespoons of greek yoghurt
  • 1 garlic clove
  • 1/4 of a cucumber
  • splash of oil

Steps:

  1. Boil the rice.
  2. For the rice, dice the chilli and red onion.
  3. For the burrito, thinly slice the chicken, peppers and red onion.
  4. Put the chicken in the pan and sprinkle over the paprika, cayenne pepper and lime. When the chicken is cooked throw in the sliced peppers, red onion and chilli.
  5. Once the rice is boiled throw into a separate pan with the kidney beans, sweetcorn, diced red onion, chilli, cayenne pepper and squeeze over the lime.
  6. Leave to simmer whilst you make the tzatziki.
  7. To make the tzatziki, blitz the greek yoghurt, oil and garlic. Then slice the cucumber and throw that in to.
  8. Feast complete.. now just serve.
